Fall Pottery,Watercolor Class Paintings and Pumpkin Muffins

I’m experimenting with carving on clay before it is bone dry. The pattern evolves as I carve. I like to work in sets, so this group has a coffee pot, as well as a creamer and sugar bowl. The creamer and sugar bowl fit nicely on the tray. I would not make coffee in the pot, but brew it in my Mr. Coffee pot and serve it from the fancy pot

I am volunteering at the Hendersonville Senior Citizen Center teaching a watercolor class three Fridays each month. Here are some of our projects

Cream Cheese Pumpkin Muffins

Muffin

  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 teaspoon pumpkin pie spice
  • 1 1/2 cups pumpkin puree
  • 1/4 cup butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 egg
  • Cream Cheese Filling
  • 4 oz cream cheese softened
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon all purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon milk
  • Instuctions
  1. Preheat oven to 350 degrees and line a muffin tray with liners
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and pumpkin spice
  3. In a separate bowl, combine the pumpkin, melted butter, vanilla extract, and egg
  4. Combine the wet mixture with the dry mixture and stir until just combined
  5. Fill the muffin liners with batter about 3/4 full
  6. To make the cream cheese filling, place all ingredients into a bowl and combine.
  7. Using a Ziplock bag with corner tip cut off, add a dollop of cream cheese mixture to the muffin cups. It will sink slightly into the batter.
  8. Place muffin tray into the oven to bake for about 18 – 20 minutes
  9. Remove from oven to cool 2 -3 minutes before removing from tray
